CORNISH PASTY TO BRING BELOVED CORNISH (UK’s) STAPLE TO DOWNTOWN GLENDALE

 

Glendale, Ariz. Downtown Glendale will soon be home to Arizona born Cornish Pasty Co . The rustic, yet elegant restaurant concept will be located on the ground level of the Gaslight Building at 58th and Glendale Avenues. 

This Downtown Glendale spot marks the latest chapter in the company’s remarkable growth story. Cornish Pasty Co. has been expanding its reach across the Valley for 18 years while preserving the essence of its brand. With an “employee owned” direction, Cornish pasty manages to maintain its independence and stays true to its roots. 

“Bringing the Cornish Pasty brand to downtown Glendale marks another exciting phase in our community’s growth,” said Daniel Sabillon, Deputy Director over Downtown Redevelopment. “This new addition serves as a catalyst for the continued revitalization of the downtown area, attracting locals and visitors alike.”

The Gaslight Building has been lovingly transformed into a landmark establishment providing an inviting space for all to gather. Cornish is the newest of several businesses to open their doors in Downtown Glendale. Earlier this year, Simple Machine Brewing Company opened their taproom in another portion of the Gaslight Building formerly occupied by a speakeasy. 

“We are excited to be part of the Downtown Glendale community and look forward to sharing our passion for pasties and a good brew with you all,” said Dean Thomas, owner of Cornish Pasty. “Our menu will feature over 40 different pasty creations, all made from scratch along with homemade soups, desserts, salads and unique appetizers. All set in a non pretentious British pub atmosphere.” 

The location is expected to open in the spring of 2024. “Cornish Pasty’s arrival in Downtown Glendale is about more than just pasties, it’s a recipe for success that will add a new layer and attract more unique concepts to this growing part of the city,” said Jamie Aldama, Councilmember for Glendale’s Ocotillo District.

About Cornish Pasty

 

 The Cornish Pasty originates from Cornwall (Southwest England) and can be traced back as far as the 1200’s. Mining was once a thriving industry in Cornwall and at that time pasties were baked by the wives and mothers of the tin miners. Pasties were made with a thick crimped edge along one side so the miners could use the crimp as a handle to hold on to while eating. The miners hand would often be covered in arsenic from the mine, so the miners would discard the handle when they were done. The crusts were never wasted though, as many miners believed that ghosts, or ‘knockers’, inhabited the mines, and the leftover crusts would keep these ghosts content. Traditionally, pasties were made with different fillings at each end. One end containing meat and vegetables, and one end with a sweet filling. The sweet end would be marked with an initial so the miners knew what side to eat first. Today, Cornish pasties are filled with steak, potatoes, swede (rutabaga) and onions. At one time Cornwall had nearly 2000 flourishing tin mines, but by the 1880’s tin mining had become a rapidly declining industry. At this time, Cornish miners began emigrating to Michigan’s Upper Peninsular for copper mining bringing pasties with them.
